History of Jameson

In the 18th century, a period of remarkable economic growth in Ireland, John Jameson, a visionary entrepreneur, made a momentous decision in 1780. Inspired by the thriving times, he set out to create the finest Irish whiskey, adopting the resolute motto "Sine Metu" (Latin for "Without fear") for his venture. Jameson's dedication paid off, and his whiskey quickly gained popularity, leading him to acquire the renowned Bow Street distillery in Dublin.

As the company flourished, it embarked on an ambitious journey of expansion and continuous improvement in product quality. John's youngest son joined forces, and together, they founded John Jameson & Son, ushering in a new era of prosperity. Under their collaborative leadership, the company rose to prominence as the foremost supplier of whiskey to England, solidifying its position as a trailblazer in the industry.

The company's primary strategy was to uphold the time-honored recipe while simultaneously integrating cutting-edge innovative technologies into the production process. This led to a significant milestone during the alcohol boom in England when they installed the largest distillation still at the distillery.

By 1887, the distillery's territory expanded to an impressive 5 acres, encompassing all essential production divisions housed in a single building. It transformed into a self-sufficient town, complete with indispensable service facilities like a sawmill, cooper and carpenter workshops, a forge, and a construction shop responsible for erecting new structures. This expansion brought countless job opportunities, benefitting the people of Dublin.

However, the late 19th century proved challenging for Ireland due to post-war turmoil, civil unrest, and the implementation of the "dry law" in the United States. Jameson encountered its first crisis and suffered financial losses. Despite the modernization efforts at the distillery, the company struggled to compete with emerging Scottish producers.

In 1966, in a bid to safeguard Irish whiskey's identity, a decision was made to merge three major alcohol production concerns into one prominent entity, known as Irish Distillers Ltd. In 1988, they joined forces with the esteemed French group, Pernod Ricard. This pivotal move prompted the relocation of the main production operations to the serene landscapes of County Cork in the south of Ireland, breathing new life into the Jameson distillery.

Production Technology

Jameson's production process centers around three key ingredients: barley, corn, and Irish spring water. The barley thrives in the fields surrounding Middleton, while the pure spring water is sourced from the Dangorni River, flowing gracefully through the distillery's premises. This holds special significance, as the word "whiskey" finds its origins in the Irish term "uisce beatha," which translates to "water of life." However, due to Ireland's climate not being ideal for cultivating corn, it is procured from the sun-kissed fields of the south of France.

The journey begins with the separate fermentation and triple distillation of barley and corn. This meticulous process yields alcohols with a strength of 80-80.5% for barley and 94.4% for corn, imparting a rich and sophisticated flavor profile to the final whiskey. Notably, the method of drying the malt in enclosed ovens preserves the delicate floral aroma of the whiskey, avoiding any overpowering smoky notes.

Post-distillation, the master blender expertly combines these spirits, adjusting their strength to a more suitable 60-70% using the pristine spring water. It is at this stage that the whiskey embarks on its aging journey in special bourbon and fortified wine barrels, imported from the United States and Spain. This aging process infuses the Irish whiskey with delightful hints of vanilla, sweet sherry, and woody undertones.

As time passes in these carefully chosen barrels, the whiskey matures gracefully, acquiring its distinctive character and captivating aromas. The result is a harmonious symphony of flavors, reflecting the artistry and dedication that has been perfected over centuries, culminating in the world-renowned Jameson Irish whiskey we savor today.

Barrels of Jameson whiskey are carefully stored for years in Middleton's dark cellar, adhering to the rule that for a spirit to be labeled as Irish whiskey, it must mature on the island of Ireland for a minimum of 3 years. During this aging process, approximately 2% of alcohol evaporates each year, lovingly referred to as the "part of the angels."

Once the whiskey reaches its desired maturity, it undergoes skillful blending in a large vat before being bottled. The final decision on whether to dilute the whiskey further depends on its alcohol by volume (ABV) at the output. Jameson whiskey with 40% ABV is deemed ready to be enjoyed as it is, offering a delightful drinking experience.
